Journeyman Distillery Buggy Whip Wheat

Journeyman Distillery is located on the site of a historic factory dating to the 1880’s once used to manufacture buggy whips in Three Oaks, Michigan. Produced using Michigan-sourced organic grain, which is milled on-site, and barrels from neighboring Minnesota, everything they do is the epitome of ‘handcrafted’. Though wheat is a common ingredient in many American whiskies, they are rarely produced using it exclusively. This example made with 100% wheat and aged in new oak barrels shows the distinct grainy aroma and subtle sweetness that are the hallmarks of wheat whiskies.

The Teeling’s have been producing Irish whiskey since 1792 when Walter Teeling established a distillery in Dublin, then the epicenter of Irish distilling.  Nearly 200 years later, hjs descendent, John Teeling, played a critical role in reviving the Irish whiskey industry from its nadir of the 20th century, when he opened Cooley Distillery (producers of Kilbegan, Connemarra and Tyrconnell, etc.) in 1989. Teeling’s Cooley was the only independent distillery and the first new distillery to open in Ireland in more than 100 years. They produce unique expressions that broke the mold and pushed the envelope so much that many bemoaned their sale to Beam Inc. in 2012. But the Teeling’s weren’t out of the whiskey business as they acquired 16,000 casks of aged whiskey during the sale. Using these whiskey reserves, sons Jack and Stephen started The Teeling Whiskey Company and opened a new distillery in Dublin in 2015 (the first in over 125 years). This Single Grain expression is 95% corn and the rest malted barley and is aged in ex-California Cabernet wine barrels for just under six years and finished for six months in ex-rum casks.

The Glenrothes 2001

The Scotch producing region of Speyside, nestled in the Northeastern Highlands around the River Spey, is home to over half of all the distilleries in Scotland and therefore is rightfully considered the heart of Scotch production. Generally, Speyside malts tend to be lighter and sweeter than many other single malts though the heavy use of sherry oak at distilleries like Macallan and Balvenie. Glenrothes offers a full-bodied contrast to the classic, light and honeyed style (think Glenlivet and Glenfiddich). Founded in 1879, Glenrothes is famous for its Vintage Releases. Rather than bottling at a predetermined age (10, 12, 15, etc.) they seek to bottle each whisky at its peak, no matter the age. They refuse, in their words, to “…be locked into the consistency associated with products of fixed ages whose personality remains the same in each bottling and whose recipe is frozen in time.” These Vintages Releases are unique expressions meant to show variation from bottling to bottling while still showing the underlying nature of the vintage.

Breuckelen 77 Rye

Brad Estabrooke decided to open Breuckelen Distilling in 2010 after leaving his job as a securities trader and reading an article about recent amendments to New York laws accommodating craft distilleries. He settled on an old boiler room at 77 19th Street in an industrial part of Brooklyn. The spin on spelling “Brooklyn” comes from the original name for the area when it became the first municipality in what eventually became New York. Over time the name evolved from Breuckelen, to Brockland, to Brocklin, to Brookline, to Brookland before eventually settling on Brooklyn. The grains are locally sourced and milled on-site inside a mixer originally  used for concrete. The mash bill of 90% rye and 10% corn is fermented with non-GMO yeast, which is far more labor intensive and costly. Distillation takes place in a hybrid copper-pot/column still before aging in new American oak.

Based in Charleston, SC, High Wire was founded by husband and wife team, Scott Blackwell and Ann Marshall with the intent to produce handmade, craft spirits using local and unique ingredients. Rather than using the commodity, low-quality corn that is used to produce most bourbon, Scott’s background as a baker allows him to apply his extensive knowledge of local and heirloom grains to produce artisanal, small batch spirits. Distilled from a mash bill of heirloom white corn, red winter wheat, malted barley and Carolina gold rice bran this bourbon showcases perhaps the next evolution in craft distillation as the emphasis shifts towards the use of distinct, high quality grains.

Established in 1798 in Kirkwall on the Orkney Islands, Highland Park is the most northerly Scotch distillery and one of only two located on Orkney. This unique temperate climate differs significantly from that of the mainland, offering rich pastures, heathery peat and strong sea winds.  One of the only distilleries to malt its own barley, allowing for full quality-control of the process before kiln drying using peat cut from the distillery’s own land. The malt is aged in ex-sherry casks producing a distinct, full-bodied whiskey with heather-honey sweetness, sea salt and peaty smokiness.
