Sourced from a single vineyard composed of 47-year-old vines, Pewsey Vale’s Contours is aged for 5 years in bottle prior to release. The wine was fermented in stainless steel using only indigenous yeast.
2012 Daniel-Etienne Defaix Côte de Lechet 1er Cru

100% Chardonnay
45-year-old vines inform this mineral driven Chablis. The Defaix family is an outlier in Chablis, fermenting with native yeast and holding their wines in tank for 8 – 10 years prior to bottling. The result is a surprisingly fresh but endlessly complex Chardonnay.
2016 Marchand Tawse Villages

100% Pinot Noir
Compiled from four separate single vineyards, Marchand Tawse produces a classic Vosne-Romanee. The wine was aged for 18 months in French oak barrels of which 30% were new. 
2014 Quinault L’Enclos Grand Vin

Located near the village of Libourne, Quinault L’Enclos enjoys a warmer microclimate than many of the other growers in Saint Emilion. The wine is aged for 18 months in 50% new French oak barrels. 
2015 Scavino Bric del Fiasc

The single vineyard Bric del Fiasc has been bottled since 1978, at a time when the idea of site-specific Barolo was relatively new. The 2015 is just becoming accessible and should age gracefully for 10 or more years.

Located north of Châteauneuf-du-Pape, the Massif d’Uchaux appellation is known for its sturdy red wines based on Grenache. Simian Jocundaz is an outstanding example from the appellation, especially with 8 years or so of bottle age.
