The “L’Authentique” cuvée is sourced from 15 acres of 25 year-old vines planted in both clay and the famed Kimmeridgian limestone of the zone. The wine is fermented using native yeast before being aged for 4-6 months on the lees (fine solids) in stainless steel tanks.
