Pearse Founder’s Choice is a 12-year-old Single Malt aged in ex-Bourbon barrels from our sister distillery, Town Branch Distillery in Lexington, KY. On the nose this Irish Whiskey ripens with orchard fruits of white peach, apple and a tingle of spiced pear that come together to produce herbal and pine notes. Hints of lemon, dried orange and a touch of honeysuckle can be experienced from this Irish Whiskey. Pearse Founder’s Choice has a medium to long finish, is deliciously silky smooth and leaves you with warm notes of ginger and clove.

Gaia, the neopagan goddess of yore, a personification of Mother Earth herself, is a fitting custodian to bring forth Ireland’s first whisky distilled from certified organic Irish barley.
Appearance: Golden honey with viscous oils, and legs that if you had 40 winks, you still wouldn’t see the legs at the end of the glass.
Nose: Orange zest, malty figs, seaweed, hay in the field after light rain, salted caramel, peppermint, rosewater, freshly turned soil.
Taste: Heat and zesty pepper on the tongue, cloves, figs, oiliness that dries in the mouth, cherries, butterscotch, pears, malty, layers of spice.
Finish: Long and zesty oiliness that dries, but leaves you chewing; a sweetness that comes right at the end.

Limavady is a new whiskey brand from Northern Ireland — 60 miles north of Belfast — where it makes a single product: A single barrel, single malt whiskey that is triple distilled from Irish barley, then finished in ex-bourbon and PX sherry casks. Golden amber color. Aromas and flavors of peach, starfruit, spiced caramel, butter cookies, and hints of grapefruit with a velvety, vibrant, dryish medium-full body and a peppery, very complex, very long finish conveying impressions of toasted scones with honey, baked apples, roasted nuts, and toasted sourdough. A complex Irish Single Malt with big impact and big elegance.

Bottled at cask strength, a whiskey rich in oils and spice with incredible depth. Beautifully balanced for its abv, it has layers of sweet caramel and fig, flickers of campfire smoke, and wood spice. Best described as a muddy whiskey, the heavy oils provide a wonderfully unique drinking experience coupled with a long and unrelenting finish.
