So, here’s the thing…some people won’t drink white wine in cold weather. I’m not sure why that is. Because it’s served chilled? So what, they don’t drink coffee in the summer? Still other people won’t drink white wine at all. It seems that somehow, somewhere, they were told that white wine isn’t serious. Or interesting. Or age-worthy.
Which brings me, in a roundabout way, to Chablis. Because, the wine bigots are wrong; white wine is serious, interesting and age-worthy, and Chablis exemplifies those attributes.
Chablis is made from Chardonnay, of course, which allows the bigots and know-nothings (I know, that’s redundant) to scorn Chablis on two fronts. Interrupt the hysterics the next time someone is screeching about Chardonnay by pointing out that Chardonnay is not a flavor, but a grape, and then a wine, and it can and does taste differently based upon where it’s grown, when it’s picked and how it is fermented and aged.
This here wine is made of grapes grown in chalky, limestone soils that are not good at retaining moisture, in a cool area, that are picked early and are therefore low in sugar and high in acidity. The grapes are then fermented and aged in stainless. As a result, this wine is textbook Chablis: crisp, racy, and mouth-watering, evoking typical aromas of white flowers, citrus, and crushed seashells. It’s also serious, interesting and age-worthy.
